Easy Mediterranean Vegetable Pancakes

These Easy Vegetable Pancakes bring a vibrant, savory twist to pan-cooked fritters. Loaded with finely shredded zucchini, carrots, sweet onions, and crumbled feta cheese, they offer a crisp exterior with a tender, herb-infused center. Perfectly paired with a dollop of cool tzatziki and a squeeze of fresh lemon, they make a fantastic quick lunch, side dish, or savory breakfast.

Ingredients & Equipment

  • Equipment Required: Large skillet or griddle, large mixing bowl, box grater or food processor, spatula, clean kitchen towel or cheesecloth.

  • Vegetable Base:

    • Carrot: 50g, finely shredded

    • Zucchini: 1 medium (about 150g), finely shredded

    • Onion: ½ small (50g), sliced into thin strips

  • Binder & Flavor Matrix:

    • All-Purpose Flour: ¼ cup (or chickpea flour / gluten-free blend)

    • Eggs: 2 large

    • Milk: ¼ cup (or unsweetened almond milk for dairy-free)

    • Feta Cheese: ¼ cup, crumbled

  • Seasonings & Frying:

    • Dried Oregano: 1 tsp (Greek oregano preferred)

    • Garlic Powder: ½ tsp

    • Ground Cumin: ½ tsp

    • Salt & Black Pepper: To taste

    • Olive Oil Spray: For frying
