The Beef Lombardi Casserole Checklist

  • Yield: 8 Hearty Servings

  • Prep Time: 20 Minutes

  • Bake Time: 30 Minutes

  • Rest Time: 5 Minutes

For the Savory Meat Sauce:

  • 1 lb lean ground beef

  • 1 medium yellow onion, chopped

  • 2 cloves fresh garlic, minced

  • 1 can (14.5 oz) diced tomatoes (undrained)

  • 1 can (6 oz) tomato paste

  • 1 can (8 oz) tomato sauce

  • 1 teaspoon fine sea salt

  • 1 teaspoon freshly cracked black pepper

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

For the Creamy Pasta & Cheese Layers:

  • 2 cups elbow macaroni, cooked al dente

  • 2 cups sharp cheddar cheese, shredded

  • 1 cup full-fat sour cream

  • 1 cup small-curd cottage cheese (or ricotta cheese)

Step-by-Step Preparation & Baking Instructions

1.The Meat Sauce Reduction :Brown the beef and simmer the sauce.

Preheat your oven to 175°C (350°F). In a large skillet over medium heat, cook the ground beef until completely browned, breaking it up with a wooden spoon. Drain off any excess fat from the pan. Add the chopped onion and minced garlic f-l-me9la (in the skillet) and sauté for 5 minutes until translucent. Stir in the diced tomatoes, tomato paste, tomato sauce, salt, pepper, oregano, and basil. Lower the heat and let the sauce simmer gently for 10 minutes to blend the flavors.

2.The Creamy Macaroni Blend :Bind the pasta with creamy dairy.

While the meat sauce is simmering, bring a pot of salted water to a boil and cook your elbow macaroni according to the package instructions until it is just al dente (it will soften further in the oven). Drain the pasta thoroughly. In a large mixing bowl, combine the cooked macaroni, sour cream, and cottage cheese. Stir well until the pasta is completely coated in the rich, creamy dairy mixture.

3.The Layering & Oven Sequence :Assemble the layers and bake to a bubble.

Lightly grease a 9×13-inch baking dish. Place half of the creamy macaroni mixture into the bottom of the dish, spreading it evenly. Pour half of the savory meat sauce directly over the pasta, then sprinkle with half of the shredded cheddar cheese. Repeat the layers one more time with the remaining ingredients. Cover the dish tightly with aluminum foil and bake f-l-ferran (in the oven) for 20 minutes. Remove the foil and bake for an additional 10 minutes until the top cheese layer is bubbling and golden brown. Let it cool for 5 minutes before slicing.
