Step-by-Step Coating & Frying Protocol

1.Okra Slice Preparation and Buttermilk Soak :Slice pods uniformly and treat with acidic buttermilk.

Rinse and thoroughly dry the okra pods before cutting them into uniform $1/2$-inch rounds. Place the sliced okra in a bowl and pour in the $1/2$ cup of cold buttermilk, stirring to ensure every piece is evenly coated to neutralize mucilage.

2.The Seasoned Cornmeal Blend Assembly :Combine dry starches and spices into a uniform dredge.

In a separate shallow dish or bowl, whisk together the cornmeal, all-purpose flour, salt, black pepper, paprika, and garlic powder until completely combined.

3.Dredging and Crust Attachment :Coat wet okra in small batches for maximum crispness.

Using a slotted spoon, lift the okra from the buttermilk, allowing excess liquid to drip off. Toss the okra rounds in the cornmeal mixture in small batches, pressing lightly so the dry coating adheres firmly to all sides.

4.Skillet Frying and Paper Towel Draining :Maintain high heat to flash-fry without oil absorption.

Heat 1 inch of oil in a heavy cast-iron skillet to $180^\circ\text{C}$ ($350^\circ\text{F}$). Fry the okra in single-layer batches for 3 to 5 minutes, turning occasionally until golden brown and crispy. Drain on a paper-towel-lined plate and serve hot f-l-gass3a (at the table).
