Step-by-Step Preparation & Assembly Instructions
In a medium mixing bowl, combine your fine graham cracker crumbs, melted unsalted butter, and optional sugar. Mix thoroughly until the crumbs are evenly moistened and feel like wet sand. Dump the mixture into a 9-inch springform pan. Using the flat bottom of a drinking glass, press the crumbs firmly and evenly into the base. Place it f-l-tllaja (in the fridge) for 30 minutes to harden.
Take 3 cups of your fresh, hulled strawberries and place them into a blender or food processor. Blend on high speed until completely smooth. If you prefer a flawless texture without tiny seeds, pass this puree through a fine-mesh sieve into a bowl, then set aside. Finely dice the remaining strawberries to use inside the filling and for final decoration.
In a large bowl, beat the softened cream cheese for 2 to 3 minutes until perfectly smooth. Add the granulated sugar, vanilla extract, lemon zest, and ¾ cup of your prepared strawberry puree, beating until uniform and pink. In a separate, chilled bowl, whip your cold heavy cream and powdered sugar until stiff peaks form. Using a silicone spatula, gently fold the whipped cream into the pink cream cheese mix in two separate additions, followed by the diced strawberries.
Pour the velvety pink filling directly over your chilled crust in the springform pan. Use an offset spatula to smooth the surface into a sleek, level finish. Cover the pan loosely with plastic wrap and slide it back f-l-tllaja (in the fridge) for at least 6 hours, or ideally overnight. Once fully set, run a thin knife around the edge, pop the springform sides open, garnish with extra diced berries, and slice using a hot, clean knife.
