Step-by-Step Roasting Instructions

1.Temper the Meat :Essential for even cooking.

Remove the prime rib from the refrigerator 1 to 2 hours before roasting to bring it closer to room temperature. Dry the entire exterior surface thoroughly with paper towels.

2.Prepare the Garlic-Herb Rub :

In a small bowl, combine softened butter (or olive oil), minced garlic, fresh rosemary, thyme, salt, and black pepper to form a thick paste.

3.Coat the Roast :

Rub the garlic-herb paste evenly over all sides of the beef. Place the roast fat-side up in a heavy roasting pan (bone-in roasts act as their own natural rack).

4.High-Heat Sear :

Preheat oven to $450^\circ\text{F}$ ($230^\circ\text{C}$). Roast the meat uncovered for 15 minutes to establish a caramelized outer crust.

5.Slow Roast to Temperature :

Reduce oven temperature to $325^\circ\text{F}$ ($160^\circ\text{C}$). Roast for 12 to 15 minutes per pound, monitoring internal temperature with a meat thermometer inserted into the thickest part (avoiding bone).

6.Rest and Slice :

Remove from oven when the internal temperature reads $120^\circ\text{F}$ for Rare or $130^\circ\text{F}$ for Medium-Rare. Tent loosely with foil and rest for 20 to 30 minutes before carving against the grain.
