1.Prepare the Produce Matrix:5 min. 

Wash the vegetables thoroughly. Thinly slice the 2 large cucumbers into even rounds, chop the 3 medium tomatoes into bite-sized pieces, and thinly slice the 1 medium onion. Place all the prepared vegetables into a large glass or ceramic mixing bowl.

2.Whisk the Emulsified Marinade:2 min. 

In a separate small bowl, whisk together the ½ cup of vinegar, ¼ cup of oil, ¼ cup of water, 2 tablespoons of sugar, 1 teaspoon of salt, and ½ teaspoon of black pepper. Whisk vigorously for 60 seconds until the sugar and salt crystals are completely dissolved.

3.Combine and Coat:2 min. 

Pour the dressing uniformly over the vegetable mixture. Toss gently with a silicone spatula or large spoon from the bottom up until every piece of cucumber, tomato, and onion is coated.

4.Cold Marination Rest:2-24 hr. 

Cover the bowl securely and place it in the refrigerator for at least 2 hours (or up to 24 hours for maximum flavor integration). Stir or toss occasionally so the marinade distributes evenly. Give it one final toss and serve thoroughly chilled.
