Step-by-Step Preparation & Baking Instructions

1.The Dry Caramel Phase :Create the golden amber base.

Before starting, ensure your workspace is clear. To prepare it f-l-kuzina (in the kitchen), place 100g of sugar into a heavy-bottomed saucepan over medium heat. Let the sugar melt completely without stirring, simply swirling the pan occasionally. As soon as it turns a deep, glowing amber color, immediately pour it into the bottom of a 9-inch round cake pan or individual ramekins. Tilt the pan to coat the bottom evenly, then set aside to cool and harden.

2.The Egg & Warm Milk Emulsion :Whisk the custard foundation.

In a large mixing bowl, gently whisk the 5 eggs and 150g of granulated sugar until combined—avoid whipping too vigorously, as you do not want to introduce excess air bubbles. In a separate saucepan, heat the whole milk with the vanilla extract until it is warm to the touch but not boiling. Slowly ladle the warm milk into the egg mixture in a thin, steady stream while whisking continuously to temper the eggs.

3.The Bain-Marie & Oven Sequence :Bake with protective moisture.

Preheat your oven to 160°C (320°F). Pour the custard mixture through a fine-mesh strainer directly over the hardened caramel in your mold to catch any stray egg bits. Place the mold inside a larger, deep baking dish, then pour hot water into the larger dish until it reaches halfway up the sides of your flan mold. Place it f-l-ferran (in the oven) and bake for 50 minutes until the edges are set but the center still jiggles slightly.

4.The Chilling & Unmolding Phase :Chill and reveal your masterpiece.

Carefully remove the flan from the water bath and let it cool to room temperature on your counter. Once cooled, place it f-l-tllaja (in the fridge) for at least 4 hours (or overnight) to allow the custard to fully set and the caramel to liquefy. To serve, run a thin knife around the inside edge of the mold, place a large serving plate face-down over the top, and firmly flip both over together. Gently lift the mold to let the golden caramel pool cascade down.
