4 large croissants, 12 slices ham, 8 slices Swiss cheese, 2 tbsp Dijon mustard, 2 tbsp mayonnaise, 1 tbsp melted butter, ½ tsp dried parsley. Method: Heat the oven to 190°C/375°F. Slice the croissants without cutting completely through. Mix the mustard and mayonnaise, spread inside, then fill each croissant with 3 slices of ham and 2 slices of cheese. Brush with melted butter, sprinkle with parsley and bake for 8–10 minutes until crisp and bubbling.
12 slices bread, 16 slices ham, 8 slices cheese, 1 large tomato sliced, 8 lettuce leaves, 6 tbsp mayonnaise, 2 tsp mustard, 200g ridged crisps, salt and pepper. Method: Toast the bread until golden. Mix the mayonnaise and mustard. Build four triple-layer sandwiches using ham, cheese, tomato, lettuce and sauce between each layer. Season the tomato lightly, secure each sandwich with cocktail sticks and slice into quarters. Serve with crisps.
4 brioche buns, 8 slices ham, 6 large eggs, 100g grated cheddar, 4 cheese slices, 2 tbsp butter, 2 tbsp milk, 1 tbsp chopped chives, salt and black pepper. Method: Whisk the eggs with milk, salt and pepper. Melt 1 tablespoon of butter in a pan over low-medium heat, add the eggs and gently stir until soft and creamy. Mix in the grated cheddar and chives. Toast the buns with the remaining butter, then layer each with ham, one cheese slice and scrambled egg. Close and serve immediately.
