Ingredients & Equipment

  • Equipment Required: Baking sheet, parchment paper, large skillet, mixing bowl, rolling pin, knife or pizza cutter, fork, pastry brush.

  • Pastry Vessel & Wash:

    • Puff Pastry: 2 sheets, thawed

    • Egg Wash: 1 egg, beaten

  • Creamy Spinach Filling:

    • Fresh Spinach: 2 cups, chopped

    • Ricotta Cheese: 1 cup

    • Grated Parmesan Cheese: ½ cup

    • Olive Oil: 1 tbsp

    • Garlic Powder: 1 tsp

    • Salt & Black Pepper: To taste

Food Science: Steam Expansion & Moisture Control

  • Laminated Dough Puffed Layers: Puff pastry relies on alternating micro-layers of butter and dough. During baking at $400^\circ\text{F}$ ($200^\circ\text{C}$), water inside the dough layers rapidly turns into steam, lifting and separating the buttery laminations into crisp, airy layers.

  • Spinach Moisture Draining: Wilted fresh spinach releases excess moisture. Allowing the spinach to cool and squeezing out moisture before stirring into the ricotta prevents the pastry base from getting soggy during baking.
